For just a few months, during winter, the seasonal delicacy, Patali Gur (Date plum jaggery-solid) becomes freshly available. Interestingly, the flavor of this seasonal delicacy varies depending on the region’s altitude and climate. North Bengal offers a distinctly rich and heavenly flavor. South Bengal adds a delightful, subtle salty note. Rarh Region known for its sweeter and earthy taste.

 

Patali Gur is a traditional solid jaggery made from the sap of date palms, known locally as “date plums” (Diospyros lotus or Diospyros texana). It is a thick, dark, and hard block or lump of jaggery with a rich, complex flavor and a slightly earthy taste.

 

But most of today’s generation unfamiliar with the unique and rich taste of natural, unadulterated Nolen Gur. However, the rising demand has often pressured producers and companies to compromise on quality, favoring cheaper, mass-produced options. Burned sugar, sugar syrups, and artificial essences may enhance appearance and quantity, but they diminish the authentic taste and quality of jaggery.
